Sweet Holiday Chex Mix

This sweet Chex mix is perfect any time of year, but it is PERFECT for the holidays! Most recipes like this call for coconut but I'm not a fan so I replace it with one of my all time favorite cereals. Let me just warn you know, this stuff is highly addictive!!! The best part is it is super easy to make and very simple. If you like coconut, I'll put a link for the coconut one at the end of the post ;)

Ingredients:

3 c Rice Chex cereal

3 c Corn Chex cereal

3 c Golden Graham cereal

2 c Honey OH's

1 c Sliced Almonds

1 c Sugar

1 c Corn Syrup

3/4 c Salted Butter

1 tsp Vanilla Extract


Instructions:

  1. In a large mixing bowl, toss together Rice Chex, Corn Chex, Golden Grahams, Honey OH's, and sliced almonds, set aside.

  2. In a medium saucepan combine Sugar, Corn Syrup, and Butter. Bring Mixture to a boil over medium-high heat, stirring occasionally.

  3. Allow mixture to boil for 2 minutes, stirring occasionally.

  4. Remove from heat, stir in Vanilla and carefully pour sugar mixture over cereal mixture and toss to evenly coat.

  5. Store in an airtight container at room temperature.

Notes:

*If you don't want the mix as gooey and sticky you can add an extra 1 cup of each cereal, for a lighter coating.
